Hominy Casserole

Serves: 6
  • 2 (15-oz) cans hominy, drained
  • 8 oz sour cream
  • 1½ cups montery and cheddar jack cheese, grated
  • 1 (4-oz) can chopped green chiles
  • ½ chopped sweet red pepper
  • salt and pepper to taste
  1. Preheat oven to 350 degrees F.
  2. Set aside half of the cheese.
  3. Mix the remaining cheese with the remainder of the ingredients and pour into a 9x9-inch baking pan. Top with remaining cheese.
  4. Bake for 30 minutes or until bubbly around the edges.
