Hominy Casserole
- 2 (15-oz) cans hominy, drained
- 8 oz sour cream
- 1½ cups montery and cheddar jack cheese, grated
- 1 (4-oz) can chopped green chiles
- ½ chopped sweet red pepper
- salt and pepper to taste
- Preheat oven to 350 degrees F.
- Set aside half of the cheese.
- Mix the remaining cheese with the remainder of the ingredients and pour into a 9x9-inch baking pan. Top with remaining cheese.
- Bake for 30 minutes or until bubbly around the edges.
