½ cup chicken broth, ½ cup additional chicken broth
1 can mushroom soup
1 small jar pimiento, chopped
1 can Chow Mein Noodles
½ cup cashew nuts, halved
Instructions
Cover chicken with water seasoned with salt and pepper. Cook until done, then de-bone chicken and chop into bite-sized pieces.
Simmer celery and onion in chicken broth. Dilute soup with ½ cup chicken broth. Mix all ingredients, reserving some noodles and nuts.
Place in casserole dish and bake at 350 degrees F for about 40 minutes or until bubbly. Top with remaining noodles and nuts the last 10 minutes of baking.
