Sweet Potato Pie
- 1 Tbsp. butter
- 1 tsp. salt
- 1 cup sugar
- 1¾ cup mashed cooked sweet potatoes
- 1½ cups milk, scalded
- 2 large eggs
- 2 tsp. vanilla
- 1 pie shell, unbaked
- Preheat oven to 375 degrees F.
- In a large bowl, add butter, salt and sugar to the cooked sweet potatoes. Add milk, eggs and vanilla.
- Pour mixture into unbaked pie shell.
- Bake for 45 minutes. Let cool completely before serving. Garnish with a dollop of cool whip, if desired.
