Great Pumpkin Bread
- 1 cups plus 2 tbsp oil
- 3 cups sugar
- 3 eggs
- 1 tbsp vanilla
- 3 cups flour
- 1½ tsp cinnamon
- 1 tsp each of cloves, ginger, and nutmeg
- 1 tsp salt
- 2 tsp baking powder
- 1½ tsp baking soda
- 1 (16 ounce) can pumpkin
- 1 cup pecans, chopped
- Preheat oven to 325 degrees. Grease and flour 2 (9 x 5) inch loaf pans.
- Blend together oil, sugar, eggs, and vanilla. Set aside.
- Mix dry ingredients together and add to mixture.
- Add pumpkin and pecans and mix well.
- Bake for approximately 1 hour.
